We were trying to find our way through the cobblestone narrow streets of Eminonu, the old city on a cold and windy day. District is always crowded with people, so tight that if you don’t watch your steps you can end up in a completely different place than intended. Like different ocean currents; some go left, some go right and some just bear down on you.
That day was no different. Struggling to find our way, we somehow managed to climb the century old stairs of the Egyptian Bazaar. And then, I ate one of the best keskek of my life in Pandeli Restaurant!
Mosyo Pandeli first started being in food business with his kofte (meatball) truck at the backstreets of Egyptian Bazaar. Later on, he opened up his first small kofte restaurant which ended up re-locating numerous times – however he was always around the old city. These happened around 1910s.
In 1926, he opened up a restaurant in Arabacilar Street which marked his fame. He was like a maestro in and outside the kitchen, his regulars were famous local & global artists, politicians, writers. And there, he created almost century famous dishes: dolma with vegetables and chicken, sea bass wrapped in paper, eggplant & doner borek. And almond cookie.
Like all the great chefs, he was sui generis; at times yelling his staff or murmuring the guests, but always with a great spirit that everyone felt it was part of the show.
In 1955’s 6-7 September incidents, his restaurant was tared apart and Mosyo Pandeli was frustrated, thinking of quitting. All newspapers wrote about Pandeli, how much he would be missed and how Istanbul would be meaningless without him. So, Prime Minister of the time wanted to do something about it, and he convinced Governor of Istanbul to assign a new place for Pandeli’s restaurant. That’s how he moved and opened up his new restaurant at the second floor of Egyptian Bazaar.
Pandeli was closed for the last 2 years, but luckily there are still people who are willing to own the history and give back the value it deserves. Now, with its new owners, Pandeli is running again and you can find the same menu with the same exquisite atmosphere. There is nothing like watching Golden Horn from the small window of Egyptian Bazaar and dreaming of people who’ve been eating before you: Audrey Hepburn, Robert De Niro, John Malkovich…
There is one story which I loved about Pandeli. Once he became very famous, he started having businessman as regular guests from all over the globe. One day, an American proposed him to open up a branch abroad. Pandeli asked “What about the ingredients, how will I find them?”, and American said “We’ll bring them with plane (from Turkey)“. And Pandeli said “Each day, I pick up my spices from the local bazaar, I work with my local butchers, I pick everything by hand. How I can I cook with ingredients shipped with plane? A beautiful rose can only raise from the soil she loves.“. And he refused the offer.

Zamana Karşı Duran Bir Hikaye: Pandeli Restaurant
Soğuk ve rüzgarlı bir gün, Eminönü’nün kaldırım taşı döşeli dar sokaklarında yolumuzu bulmaya çalışıyoruz. Burası her zaman insanlarla doludur, hatta o kadar kalabalıktır ki nereye gideceğini baştan bilmezsen kendini tamamen bambaşka bir yerde bulursun. Insanların yürüyüşleri okyanustaki akıntılara benziyor; aynı yönde ilerleyenlerin bazıları sola, bazıları sağa yürüyor; bazıları ise sadece üstüne üstüne geliyor.
O gün de farklı değildi. Pür dikkat yolumuzdan şaşmamaya çalışırken, Mısır Çarşısı’nın asırlık merdivenlerinden tırmanıp 2.kata çıkmayı başardık. Ve sonra… Sonra Pandeli Restaurant‘ta hayatımın en iyi keşkeklerinden birini yedim!
Mosyo Pandeli, ilk olarak Mısır Çarşısı’nın arka sokaklarındaki köfteci arabası ile hammallara köfte-ekmek satarak hayata atılıyor. Daha sonra, 1910’larda ufak bir köfte dükkanı açıyor ama sürekli yer değiştiriyor.
Pandeli’nin parmakla gösterilecek ve uzun süre kulaktan kulağa konuşulacak restaurantını açması 1926 yılında. Arabacılar Caddesi üstünde. Kendisi hem mutfakta hem de restaurantta adeta bir maestro gibi. Ünü kendisini aşıyor ve ünlü sanatçılar, politikacılar, yazarlar Pandeli’nin müdavimi oluyorlar. Mosyo Pandeli, o dükkanda mutfağa ilk defa giren ve hala şuan bile çoğu restaurantta servis edilen asırlık lezzetler yaratıyor: sebzeli ve piliçli dolma, kağıtta levrek, patlıcanlı dönerli börek. Ve bademli kurabiye!
Tüm büyük şefler gibi, o da nev-i şahsına münhasır biri; bazı günler çalışanlarını herkesin ortasında fırçalıyor bazen de misafirlerine söyleniyor. Ama hepsi restaurantın atmosferinin, samimiyetinin ve gerçekliğini bir parçası gibi. Kimse şikayet etmiyor.
Malesef 1955’teki 6-7 Eylül olayları sırasında Arabacılar Caddesi’ndeki restaurantı yağmalanıyor. Mosyo Pandeli o kadar üzülüyor ki, aşçılığı bırakmayı düşüyor. Bunu duyan gazeteciler “ah Pandeli, vah Pandeli, sensiz Istanbul neye benzer” diye manşetler atınca, dönemin başbakanı Adnan Menderes duruma el atıyor. Istanbul Valisi’ni arayıp, Pandeli’ye bir yer tesis etmesini istiyor ve o zaman vakıflara ait olan Mısır Çarşısı’nın 2.katına yerleşiyor Pandeli.
Pandeli son 2 yıldır turist azlığından dolayı kapalıydı, ama neyse ki hala tarihe sahip çıkan ve ona hak ettiği değeri geri verebilen insanlar var. Şimdi, yeni sahipleri ile Pandeli tekrar kapılarını açtı. Restorasyonu ve menüsü orjinaline sadık kalınarak yapılmış. Bahsettiğim tüm lezzetler yine menüsünde yerini almış. Mısır Çarşısı’nın küçük ve demir pencerelerinden Haliç’i izlemek ve senden önce o atmosferde yemek yemiş insanları hayal etmek kadar muhteşem bir Istanbul deneyimi çok az bulunur. Kimler geçmiş Pandeli’den? Audrey Hepburn, Robert De Niro, John Malkovich…
Bitirmeden, son olarak Pandeli hakkında sevdiğim bir hikayeden bahsetmek isterim. Pandeli ünlenince, dünyanın her tarafından nüfuz sahibi insanların ziyaret ettiği bir yer haline geliyor. Bir gün bir Amerikalı, Pandeli’ye ortaklık teklif ediyor. Pandeli soruyor “Malzemeleri nerden bulacağım?”, ve Amerikalı “Onları uçakla getireceğiz (Türkiye’den)” diyor. Ve Pandeli, “Ben her gün baharatlarımı almak için aşağıdaki pazara iniyorum, etimi kendi kasabımdan alıyorum, herşeyi ellerimle seçiyorum. Uçakla gelen sebzelerle nasıl yemek pişer? Güzel gül sevdiği toprakta biter.” diyor ve teklifi reddiyor.

Cukurcuma is one my favorite neighborhood in Istanbul. And its famous with its numerous antique shops. Each one has unique items; books, records, lamps, funny items, etc. Find my Cukurcuma guide in 
Something you can’t find in most of European cities: a coast line. On a sunny day, you can enjoy walking from Ortakoy to Emirgan. Trip will take around 45 minutes, but time flies by while watching ships and boats pass by. Most picturesque stops are in Rumelihisari, its less crowded with people and home to waterside mansions.
90 meters away from Galata Tower, you’ll find Konak Cafe. It has 2 floors; the first floor is full of of grandma style furniture that can be overwhelming. Just keep climbing! Its terrace in the second floor has arguably one of the best Istanbul views. You can see full Bosphorus, a very close view of the old city Sultanahmet and Beyoğlu Ophthalmic Education & Research Hospital. They don’t complain if you just take a photo and leave; but you can order tea out of courtesy.
